Rich, bordering on creamy, yet large flowers of blue make it crumbly. Much in demand with our customers now. 3.25 pound wheel (appox).

Cabernet Sauvignon, Sangiovese, Merlot, some big Chardonnays

90 day old raw ewe\'s milk from Hope Farm in Vermont
Washed rind and rinsed curd give a subtle palate feel to this with undertones of Hazelnut and vanilla.

Riesling, Pinot Gris or one of the many rose wines now available.

60-180 day old raw ewe\'s milk from Bellwether Farms
The younger versions exhibit a ghostly lemon, the older ones are much fruitier. 3.5 pound wheel

Try a brut that shows green. The cheese is usually too high in acid for a red.

90 day old raw ewe\'s milk cheese from Hope Farm in East Charleston, Vermont
Washed rind semi-soft, it looks like a Tomme de Savoie, but the taste is richer, with a warming gravy finish. 3.5 pound wheel.

Rich Chardonnays, possibly Syrahs. Certainly Blackstone\'s Riesling.



 Vermont Shepherd     $48.00 lb
6 month old raw ewe\'s milk cheese from Putney Vermont
Pieces come from a 10 pound Pyrenees style cheese. Delicate, even velvety, with a long finish reminiscent of autumn bonfires. Nothing short of magical.

We prefer this with library cabernets from Rutherford, Oakville or St. Helena. Spottswoode, Lail, Raymond Generations are all great with Vermont Shepherd
