Raw milk version of Flavio's best cheese. This will be less assertive than the pasteurized version. Why is that?

Due to the relatively lower acid in this cheese and more subtle culturing, this cheese will go with Chablis style Chardonnays, Pinot Noirs and relaxed Cabernets

Akin to Classico except that beer has been added to the vat. A lot more subtle than it might appear. Arguably one of the gentlest cheeses we have.

Try it with beer if you wish, but we prefer it with a light red table wine.

I have this cheese written in my Will. I intend to be buried with it. 90 days old, covered in unmascerated grape leaves. Nothing short of spectacular. Usually a 2 pound wheel.

Many wines but try Loxton's Zinfandel or Muscardini's Sango.
