This 18 month version of the Fiscalini cheddar exhibits, to our way of thinking, considerable subtlety. Raw milk.

Cheddars in general like Cabernet Sauvignons. The younger and livelier the better.

Well rounded and unassertive blue brie log. Perfect for the beginning blue eater or those who profess not to like blues. Yet, well received by experienced blue eaters. 4.4 pound log. Pasteurized.

John's Cento Valley style cheese. Large eyes, crisp golden paste, well rounded herbage buttery taste, this is fast becoming their best seller. Aged 9 to 12 monhs, made in a gouda mould.

This is a good crossover cheese. Works well with Almost every wine. Comfortable with Chardonnays, brazen with Merlots, cozy with Cabernets.

 Oregonzola     $30.00 lb or $105.00 for a full wheel
120 day old raw cow's milk from Rogue Creamery
Fruity without being overpowering, well rounded rather than sharp, finishing that characteristic gorgonzola dirty sock mouth feel. A real hit.

Something white and rich. Sauterne comes to mind, but other full bodied, though not necessarily late harvest, whites may also reward. Viognie et al.



 Parmigiano Reggiano      $26.00 lb
Vecchio, raw cow's milk, Emilia Romagna
We prefer this premier quality vecchio to overly dry stravecchios. The milk quality is not what it used to be, which makes it difficult to find great three year parms.

Pairs with almost any red wine. Try it with Cabernet Sauvignons from Del Dotto Vineyards.

17 months old raw cow's milk made by Uplands Cheese Co.
We put this head to head against the gold medal winning Swiss gruyere for about six months. It came out on top. Enough said. World class. 10 pound wheels.

Try it with Chardonnays and Cabernets.

 Point Reyes Original     $21.00 lb or $100.00 for a full wheel
6 months old, made on raw cow's milk from Pt. Reyes Cheese Co., California
The milk quality shines through on this cheese. However, for all it's age, the cheese shows itself to be young and fresh. Prefers to be served cool, about the same temperature as a sauvignon blanc. Pieces fresh cut from a 6.35 pound wheel (appox).

Anything with a riot of fruit in it. Many late harvests and ports also.



 San Joaquin Gold     $23.00 lb

This 30 pound wheel is a rinsed curd, perfectly salted and expertly renneted. An intricate and balanced taste that at once evokes an unusual mixture of grana and tomme de savoie styles. 16 months old. Raw milk.

Loves bruts, tolerates blanc de blancs, sulks with a bland de noir. Hard to pair with big cabernets. Better with pinots.

 Seastack     $25.00 per piece
Mt. Townsend Creamery, Port Townsend, Washington
A pasteurized lactic fermentation cheese usually under 20 days old, covered in charcoal with a Candidum rind. Well balanced and refreshing. Avoids excessive tartness.

Seems to like Cabernets, Syrahs.

 Snow Canyon     $28.00 lb
5-12 months old made on raw milk at Rockhill Creamery, Cache Valley, Utah
This is destined to be a great American cheese. The wide open paste of the younger ones with well spread eyes gives way to tight glacial marks in the older versions. Both are great: the younger is like eating a poached Bartlett pear, the older lets layers of caramel and chocolate unfold in the mouth. We have only younger ones at the moment.

Newly released cabernets and Bordeaux blends.

 St. Peter's Select Blue     $38.00 lb or $130.00 for a full wheel
Faribault Dairy, Faribault, Minnesota
One of the few blues in the United States aged in limestone caves. The dairy itself goes back years. Milk from 9 local herds make up this raw milk blue. 6 pound wheels.

Sauterne. Something late harvest.

Mt. Townsend Creamery, Port Townsend, Washington
Pasteurized tomme with an even spread of eyes. Semi-soft in category, I suppose. The milk is of wonderful quality. They won some awards for this, so the likelihood of seeing a raw milk version is slim. Pity

A gruyere style cheese that is wonderfully complex and full, even at 5 months. Much better older, but who can wait.
