The milk quality shines through on this cheese. However, for all it's age, the cheese shows itself to be young and fresh. Prefers to be served cool, about the same temperature as a sauvignon blanc. Pieces fresh cut from a 6.35 pound wheel (appox).
Anything with a riot of fruit in it. Many late harvests and ports also. |
